早餐面包 Breakfast Buns



Breakfast Buns 早餐面包

This bun is not only good for breakfast, it is a nice treats for afternoon tea as well. Serve with butter and a cup of coffee or earl gray, it just like heaven! 这个面包不但能当早餐,它也是下午茶点的最佳选择,涂上一点牛油再配上一杯咖啡或西茶,真的人生一大享受呢!

Ingredients 材料:

500g flour (2 cups) 面粉 500克
1 pinch of salt 盐少许
20g butter (1.3 tbsp) 牛油 20克
25g sugar (5 teaspoons) 25克糖
12g fresh/dry yeast (2 1/2 teaspoons)酵母12克
1 egg yolk 蛋黄一个
280ml milk (a little over 1 cup) 升温牛奶280毫
50g flour for dusting (3 tbsp) 面粉50克(备用)
1 egg beaten with 2tbsp water鸡蛋一个,用两茶匙水搅匀
1 Tbsp sesame seeds 芝麻一茶匙

Methods 做法

Step 1第一步:


Add to the bowl the flour, the pinch of salt, sugar, yeast, egg yolk, butter and finally pour in the milk into the mixing bowl.把面粉,盐,糖,酵母,蛋黄,牛油放入搅拌器,倒入温牛奶。

Step 2 第二步:

Now on a slow speed mix the ingredients for about 5 minutes. It's likely that the dough will become caught on the hook, so after 5 minutes stop and ease it off with your hands. Then, mix again on a medium speed for a further 3 minutes.
以慢速度搅匀材料5分钟。面团会粘着搅拌器的钩。5分钟后停止搅拌,用手把粘着的面团拿下。之后,再以中速搅拌3分钟

Step 3第三步:

Dust some flour over a flat surface.
Put the dough in the center and knead it with the palm of your hand. This will give it more texture and strength.
Knead for about 1 minute until the dough gets a velvety texture. Leave the dough to rise Place the dough in a bowl, cover it with a tea towel and leave it in a warm place to rise. This should take about an hour.
撒些面粉在平面桌,用手心的力来揉面团,大概一分钟,知道面团光滑。把面团放进碗里,用毛巾盖紧,放在温热的地方大概一小时,让面团发。

Step 4第四步:


After an hour, it should look like this, double size of the previous dough.
一小时后,面团就会发成双倍大

Step 5第五步:

Firstly, punch the dough down into the bowl to remove the air and peel it out.
首先,用手把面团压扁。

Step 6第六步:

Then dust a flat surface with flour and place the dough on top Now cut it length ways and across four times to make 10 buns. 撒些面粉于平面桌,把面团分成十小份。

Step 7第七步:

Now take one of the buns and roll it into a long strip.
把是小份的面团搓成条状

Step 8第八步:

Then hold both ends and tie it into a knot.
大成一个结

Step 9第九步:

Leave the buns to rise.
Place the buns on the baking tray lined with greaseproof paper and cover them with the tea towel. Then leave them to rise for 20 minutes.
把打结的面团放在铺上烘培纸张的烘培盘中,用毛巾盖着大约20分钟。

Step 10第十步:

After 20 minutes have passed, we need to prepare them before baking.
Using a brush, generously coat each of the buns with the egg wash. Then sprinkle over the sesame seeds followed by the salt.
20分钟后,把面团涂上鸡蛋,撒上芝麻,撒上一点盐,然后放进烘炉中以摄氏180的温度烘培15分钟。
