Shepherd's Pie 牧羊人派

Shepherd's Pie 牧羊人派

Ingredients 材料:



  • 1Kg / 2.2 lbs Minced Meat (Mutton/Beef/pork) I use Pork in this recipe 一公斤/2.2磅的绞肉(羊肉/牛肉/猪肉)。这个食谱里用的是猪肉。
  • 500G / 1.1 lbs Potatoes for mashing 500/1.1磅的马铃薯。
  • 1 Carrot (Diced) 一条红萝卜(切粒)
  • 1 Onion (Diced)一个洋葱(切粒)
  • 7 Button Mushrooms (Diced) 7颗蘑菇(切粒)
  • 50G / 17.6 ounces Grated Cheddar Cheese 50/17.6安士车达芝士条
  • 1 Tbsp Vegetable oil 一汤匙菜油
  • 150G / 11.5 tbsp Butter 150/11.5汤匙牛油
  • 1 Tbsp flour combine with 1 Tbsp of Butter 一汤匙面粉混合1汤匙牛油
  • 30ml / 1 ounce Beef stock 30毫升/1安士牛骨高汤
  • 100ml / 3.38 ounces Milk 100毫升/3.38安士牛奶
  • salt and pepper to season 盐和胡椒粉少许

Method 做法:

Step 1 第一步:

Dice the Carrot, Onion and button mushroom
把红萝卜,洋葱和蘑菇切成粒。

Step 2 第二步:
Heat the oil and then saute the onion
烧热少许油,把洋葱炒香。

Step 3 第三步:
When the onion turn brown, set aside.
把洋葱炒至金黄色,端起放一旁备用。

Step 4 第四步:
Saute the carrots and button mushroom
把红萝卜和蘑菇炒香。

Step 5 第五步:
Set aside when its turn brown
把红萝卜和蘑菇炒至金黄色后端起备用。

Step 6 第六步:
Heat the oil with 50g of butter, add in the minced meat
把50克牛油烧热,放进肉碎。

Step 7 第七步:
Keep Stiring until Its turn brown
不断搅拌直到肉碎呈棕色。

Step 8 第八步:
Add in carrots and button mushroom,add in the stock and thicken with flour and butter. Cook for another couple of minutes
加入红萝卜和蘑菇粒,牛骨高汤搅拌后用面粉和牛油勾芡。用慢火煮几分钟。

Step 9 第九步
Set aside.
端起备用。

Step 10 第十步:

Boil the potatoes in salted water until its soft.
把马铃薯用盐水煮至软。

Step 11 第十一步:
Mash the potatoes with fork.
用叉子把马铃薯压成薯泥。

Step 12 第十二步:

Add in Milk. Mix well.
加入牛奶。搅拌均匀。

Step 13 第十三步:

When the potatoes reach smooth consistency, add in onion and grated cheddar cheese. Mix well.
把马铃薯泥搅拌幼滑后加入炒香的洋葱和车达芝士条,搅匀。

Step 14 第十四步:


Transfer the meat into the baking dish.
把肉均匀放进烘培盘里。

Step 15 第十五步:

Spoon over the mashed potatoes and use a fork to create some texture.
把马铃薯泥铺上,用叉子画上一些花纹。

Step 16 第十六步:


Preheat the oven to 220 Degrees C/ 428Degrees F. Place the pie into the oven and bake for 30 minutes. Check on and off to make sure the potatoes are not burning.
预热烤箱至220C或428F。把派放进烤箱里烘培30分钟。不断查看以避免马铃薯烤焦。

Lastly,serve the pie with steam broccoli and pasta.

Pork Ribs with Honey Source 蜜汁排骨

Ingredients 材料:
1公斤排骨 1 KG Pork Ribs
一汤匙生分 1 tablespoon of corn starch
少许胡椒分 A little bit of pepper powder
一小茶匙食盐 1 teaspoon of salt
一个柃蒙(挤汁) one Lemon (Juice up)
一汤匙番茄酱 1 tablespoon of tomato source
一茶匙晒油 1 teaspoon thick soy sauce
一汤匙酱油 1 tablespoon soy sauce
一汤匙蜂蜜 1 tablespoon honey
一茶匙垛碎的蒜头 1 teaspoon minced garlic
一汤匙熟芝麻 1 tablespoon seasame (Bake until golden in colour)
一颗生菜 lettuce for decoration

Method 做法:
1.现把排骨洗干净,沥干水分后放食盐和胡椒分腌制半小时。Rinsed the ribs, drained it. Add in salt and pepper, marinate for half an hour.
2.烧热油后,把排骨炸至金黄即可。Heat the oil, deep fried the pork ribs until golden in colour. drained and put aside.
3 烧热一茶匙的食油,放进蒜头,炒至金黄,再放进番茄酱,酱油,晒油,搅拌。最后放进柃蒙汁和蜂蜜,搅拌均匀后,放进已炸熟的排骨,搅拌直至酱汁全被排骨吸收即可上碟。上碟后洒上芝麻即可。
Heat 1 teaspoon of oil, add in minced garlic,fried until the garlic turn brown, add in tomato sauce, thick soy sauce, soy sauce. Mix well. Lastly, put in lemon juice and Honey, mix well. Add in the deep fried pork ribs, tossing until the sauce being absorb by the ribs. sprinkle with sesame and serve.

青红萝炖牛肉Carrot and Raddish Beef soup

Ingredients 材料:

牛肉半公斤 Beef 1/2 KG
青萝卜一个 Radish 1
红萝卜两个 Carrots 2
红枣100克 Red dates 100Gram
枸子50克 Goji Berry 50Gram
食盐少许 Salt
芫茜菜一棵
Parsley 1 stalk

Methods 做法:
1 把牛肉切方块 Cut the beef into cube
2 把青红萝卜斜切 Cut the carrots and Radish
注:炖汤不同煮汤.炖的汤比较能保持原汁原味。现用小锅煮沸适用份量的水。煮沸了水,水的份量能盖过材料即可。先把红枣方如沸水中,10分钟后再把牛肉和青红萝卜放入,依照个人口味加入食盐,
再用一个较大的锅(能容下小锅就能)。放进少许水,再放进一块布,把小锅放进然后再隔着大锅煮。要注意,不要让大锅的水煮干了,记得要一直加水。汤水是不会干的,就是这样才会保持汤的原汁原味.Attention: Braised soup and boiled soup is different, the soup which is braised taste better. So, use a smaller pot, boil the water(as long as the water able to cover the ingredients will do.) Put in red dates, after 10 minutes, add in radish, carrots and beef cube, add in salt. cook it until boiled. Use a bigger pot ( as long as it able to fit in the small pot), add in water, put a cloth under the pot, put in the small pot, covered and boil for 3 hours
3.炖汤需要比较长的时间,大概两三个小时,牛肉和萝卜都变软了即可。食用前洒上元西更加有口感。
After 3 hours, sprinkle with parsley.

冻蜜桃芝士蛋糕 No bake Peach Cheese Cake


材料

饼底(Crust)
50克牛油 / 50g Butter
100克全麦饼干 /100g wholemeal crackers(可以用任何自己喜欢的口味的饼干/ Any biscuits you would like)
*(饼干的份量依照个人喜欢饼底的厚度而定/The Thickness of the crust depend on personal preference)

芝士糊(Filling)
奶油芝士 1 块 250克 /One Pack of Cream Cheese 250G (Anchor/Philadelphia)
鸡蛋 2 粒/ 2 Eggs
介乐丁 2 茶匙 / 2 Teaspoon Geletine
柠蒙汁 2 茶匙 / 2 Teaspoon Lemon Juice
白糖 70克 / 70G Sugar

装饰
新鲜/罐装蜜桃/ Fresh Peach/ Peach in Can

做法
1.把饼干压碎,用小火把牛油溶解.倒入饼干.搅拌均匀即可. /Crushed the biscuits,melt the butter,mix together
2.把搅拌均匀的碎饼干牛油放进烘托,然后压紧.饼底一定要压得够紧./Press on bottom of the baking pan
3.压紧后把它放进冰箱冻结./Leave it in Fridge to chill
4.把介乐丁用少许热水溶解./Melt the Geletine with hot water
5.把解冻后的奶油芝士,鸡蛋,白糖和柠蒙汁放进搅拌器中搅拌均匀,加入介乐丁然后搅拌成糊./soften the cheese andcombine with eggs,sugar and lemon juice,beat in cream , add in gelitine and beat until smooth
6.把搅拌成糊状的芝士倒入被冻结的饼底上./ pour into the crust
7.放进冰箱冻4小时或隔夜. /Chill Throughly for 4 hours or overnight.
8.冻结后,取出,用蜜桃装饰即刻食用./Decorate with peach and serve

早餐面包 Breakfast Buns



Breakfast Buns 早餐面包

This bun is not only good for breakfast, it is a nice treats for afternoon tea as well. Serve with butter and a cup of coffee or earl gray, it just like heaven! 这个面包不但能当早餐,它也是下午茶点的最佳选择,涂上一点牛油再配上一杯咖啡或西茶,真的人生一大享受呢!

Ingredients 材料:

500g flour (2 cups) 面粉 500克
1 pinch of salt 盐少许
20g butter (1.3 tbsp) 牛油 20克
25g sugar (5 teaspoons) 25克糖
12g fresh/dry yeast (2 1/2 teaspoons)酵母12克
1 egg yolk 蛋黄一个
280ml milk (a little over 1 cup) 升温牛奶280毫
50g flour for dusting (3 tbsp) 面粉50克(备用)
1 egg beaten with 2tbsp water鸡蛋一个,用两茶匙水搅匀
1 Tbsp sesame seeds 芝麻一茶匙

Methods 做法

Step 1第一步:


Add to the bowl the flour, the pinch of salt, sugar, yeast, egg yolk, butter and finally pour in the milk into the mixing bowl.把面粉,盐,糖,酵母,蛋黄,牛油放入搅拌器,倒入温牛奶。

Step 2 第二步:

Now on a slow speed mix the ingredients for about 5 minutes. It's likely that the dough will become caught on the hook, so after 5 minutes stop and ease it off with your hands. Then, mix again on a medium speed for a further 3 minutes.
以慢速度搅匀材料5分钟。面团会粘着搅拌器的钩。5分钟后停止搅拌,用手把粘着的面团拿下。之后,再以中速搅拌3分钟

Step 3第三步:

Dust some flour over a flat surface.
Put the dough in the center and knead it with the palm of your hand. This will give it more texture and strength.
Knead for about 1 minute until the dough gets a velvety texture. Leave the dough to rise Place the dough in a bowl, cover it with a tea towel and leave it in a warm place to rise. This should take about an hour.
撒些面粉在平面桌,用手心的力来揉面团,大概一分钟,知道面团光滑。把面团放进碗里,用毛巾盖紧,放在温热的地方大概一小时,让面团发。

Step 4第四步:


After an hour, it should look like this, double size of the previous dough.
一小时后,面团就会发成双倍大

Step 5第五步:

Firstly, punch the dough down into the bowl to remove the air and peel it out.
首先,用手把面团压扁。

Step 6第六步:

Then dust a flat surface with flour and place the dough on top Now cut it length ways and across four times to make 10 buns. 撒些面粉于平面桌,把面团分成十小份。

Step 7第七步:

Now take one of the buns and roll it into a long strip.
把是小份的面团搓成条状

Step 8第八步:

Then hold both ends and tie it into a knot.
大成一个结

Step 9第九步:

Leave the buns to rise.
Place the buns on the baking tray lined with greaseproof paper and cover them with the tea towel. Then leave them to rise for 20 minutes.
把打结的面团放在铺上烘培纸张的烘培盘中,用毛巾盖着大约20分钟。

Step 10第十步:

After 20 minutes have passed, we need to prepare them before baking.
Using a brush, generously coat each of the buns with the egg wash. Then sprinkle over the sesame seeds followed by the salt.
20分钟后,把面团涂上鸡蛋,撒上芝麻,撒上一点盐,然后放进烘炉中以摄氏180的温度烘培15分钟。

香茅红葱头鸡汤 Lemon Grass Shallots Chicken Soup


这道汤对于月经疼蛮有效的,大家不妨试一试吧!有妈妈在身边的时候真好,每次肚子疼妈妈总为我煮这个汤。现在长大了,得自己动手了呢!This recipe is good for those who has menstrual cramp, when i stay with mummy, whenever i experienced menstrual cramp, she will cook me the soup. Now i grew up and i have to cook for myself.

材料 Ingredients:鸡胸/鸡腿 一个 One Chicken breats/ drumsticks
香茅 两根 2 stalks of Lemon Grass
红葱头 100克 100g of shallots
胡椒粒 一茶匙 1 tablespoon of white pepper
水两公升 2 litter of water
盐少许 a pinch of salt

做法 Method:
1.鸡胸肉/鸡腿肉去皮,切成小块。Removed the skin of the chicken breasts, cut into pieces
2.红葱头去皮,切成粒状Removed the skin of the shallots and cut into dice
3.把两公升的水煮滚,放进香茅,红葱头和胡椒粒,最后放进鸡肉。Boiled the water, add in LemonGrass Shallots and white pepper, finally add in chicken.
4.慢火煮上一小时,加盐即可boiled for one hour, add in salt to taste
